Simple Turkey Lentil Soup

Description

A straightforward recipe for a hearty soup made with ground turkey and lentils.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 cup brown or green lentils, rinsed
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 bay leaf
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add ground turkey and cook until browned, breaking it up with a spoon. Drain off excess fat.
  3. Add onion, carrots, and celery to the pot. Cook until vegetables soften, about 5 to 7 minutes.
  4. Stir in garlic, thyme, and rosemary. Cook for 1 minute until fragrant.
  5. Add rinsed lentils, chicken broth, diced tomatoes, and bay leaf.
  6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 30 to 40 minutes, or until lentils are tender.
  7. Remove and discard the bay leaf. Season with salt and pepper to your liking.

Notes

  • For a thicker soup, mash about 1 cup of the cooked lentils against the side of the pot before serving.
  • You can substitute ground chicken for ground turkey.
