Description

Crispy smashed fingerling potatoes seasoned and baked until golden brown.


Ingredients

  • 1.5 lb fingerling potatoes
  • 3 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.25 tsp paprika

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place the fingerling potatoes in a large pot and cover them with cold, salted water.
  3. Bring the water to a boil and cook the potatoes until they are tender when pierced with a fork, about 15 to 20 minutes.
  4. Drain the potatoes well and let them cool slightly until you can handle them.
  5. Place the boiled potatoes on a baking sheet lined with parchment paper.
  6. Use the bottom of a glass or a potato masher to gently smash each potato until it is flattened but still mostly intact.
  7. Drizzle the smashed potatoes with olive oil.
  8. In a small bowl, mix together the salt, pepper, garlic powder, and paprika.
  9. Sprinkle the seasoning mixture evenly over the potatoes.
  10. Bake for 20 to 25 minutes, or until the edges are crispy and golden brown.
