Description
A quick and simple recipe for cheesy chickpeas cooked in a skillet.
Ingredients

- 1 (15 ounce) can chickpeas, rinsed and drained
- 1 tablespoon olive oil
- 1/4 cup shredded cheddar cheese
- 1/4 teaspoon garlic powder
- 1/8 teaspoon salt
- Pinch of black pepper
Instructions
- Heat the olive oil in a medium skillet over medium heat.
- Add the rinsed and drained chickpeas to the skillet.
- Cook for 5 to 7 minutes, stirring occasionally, until the chickpeas start to brown slightly.
- Sprinkle the garlic powder, salt, and pepper over the chickpeas and stir to combine.
- Reduce the heat to low.
- Sprinkle the shredded cheddar cheese evenly over the chickpeas.
- Cover the skillet and cook for 2 to 3 minutes, or until the cheese is fully melted.
- Remove from heat and serve immediately.
Notes
- You can substitute cheddar cheese with Monterey Jack or mozzarella for a different flavor.
- For extra flavor, add a pinch of smoked paprika with the other seasonings.
