  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon peppermint extract
  • 1/4 cup crushed peppermint candies (for topping)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the peppermint extract.
  6. Roll the dough into small balls and place them on the prepared baking sheets, about 2 inches apart.
  7. Lightly press the top of each dough ball with the bottom of a glass dipped in sugar.
  8. Bake for 8 to 10 minutes, or until the edges are lightly golden.
  9. Remove from the oven and immediately sprinkle the tops with crushed peppermint candies.
  10. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • You can use red and white striped peppermint candies for a more colorful look.
  • If the dough is too sticky, chill it for 15 minutes before rolling.
