Simple recipe for making festive peppermint cookies suitable for holiday baking.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon peppermint extract
- 1/4 cup crushed peppermint candies (for topping)
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the peppermint extract.
- Roll the dough into small balls and place them on the prepared baking sheets, about 2 inches apart.
- Lightly press the top of each dough ball with the bottom of a glass dipped in sugar.
- Bake for 8 to 10 minutes, or until the edges are lightly golden.
- Remove from the oven and immediately sprinkle the tops with crushed peppermint candies.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- You can use red and white striped peppermint candies for a more colorful look.
- If the dough is too sticky, chill it for 15 minutes before rolling.
