A rich and savory soup inspired by the classic Reuben sandwich flavors.


Ingredients

  • 1 tablespoon butter
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups beef broth
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup sauerkraut, drained and rinsed
  • 1 cup Swiss cheese, shredded
  • 1/2 cup Thousand Island dressing
  • 1/2 cup heavy cream

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add ground beef and cook until browned. Drain excess fat.
  3. Add onion and cook until soft, about 5 minutes.
  4. Stir in garlic and cook for 1 minute more.
  5. Sprinkle flour over the mixture and stir for 1 minute.
  6. Gradually whisk in beef broth.
  7. Add caraway seeds, pepper, and salt. Bring to a simmer.
  8. Stir in sauerkraut and cook for 10 minutes.
  9. Reduce heat to low. Stir in Swiss cheese until melted.
  10. Remove from heat. Stir in Thousand Island dressing and heavy cream.
  11. Heat gently until warmed through; do not boil.

Notes

  • For a thicker soup, let it simmer uncovered for a few extra minutes before adding the cream.
  • Serve with rye bread croutons for added texture.
