- 1 tablespoon butter
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups beef broth
- 1 teaspoon caraway seeds
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1 cup sauerkraut, drained and rinsed
- 1 cup Swiss cheese, shredded
- 1/2 cup Thousand Island dressing
- 1/2 cup heavy cream
Instructions
- Melt butter in a large pot over medium heat.
- Add ground beef and cook until browned. Drain excess fat.
- Add onion and cook until soft, about 5 minutes.
- Stir in garlic and cook for 1 minute more.
- Sprinkle flour over the mixture and stir for 1 minute.
- Gradually whisk in beef broth.
- Add caraway seeds, pepper, and salt. Bring to a simmer.
- Stir in sauerkraut and cook for 10 minutes.
- Reduce heat to low. Stir in Swiss cheese until melted.
- Remove from heat. Stir in Thousand Island dressing and heavy cream.
- Heat gently until warmed through; do not boil.
Notes
- For a thicker soup, let it simmer uncovered for a few extra minutes before adding the cream.
- Serve with rye bread croutons for added texture.
