Zucchini Ground Beef Casserole

Description

A simple baked casserole made with ground beef, zucchini, and cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium zucchini, sliced
  • 1 (15 ounce) can tomato sauce
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease an 8×8 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain off any excess fat.
  3. Add chopped onion and minced garlic to the skillet. Cook until the onion softens, about 5 minutes.
  4. Stir in oregano, salt, and pepper. Cook for 1 minute more.
  5. Layer half of the sliced zucchini in the bottom of the prepared baking dish.
  6. Spread the cooked ground beef mixture evenly over the zucchini layer.
  7. Top the meat mixture with the remaining zucchini slices.
  8. Pour the tomato sauce over the top layer of zucchini.
  9. Sprinkle the shredded cheddar cheese over the tomato sauce.
  10. Bake for 30 to 35 minutes, or until the cheese is melted and bubbly and the zucchini is tender.

Notes

  • You can substitute ground turkey for ground beef if you prefer.
  • For a richer flavor, add 1/2 cup of beef broth with the tomato sauce.
