A flavorful vegan burrito bowl featuring BBQ jerk seasoned jackfruit, chipotle sauce, and fresh toppings.

- 1 (20 ounce) can young green jackfruit in brine or water, drained and rinsed
- 1 tablespoon olive oil
- 1/2 cup BBQ sauce
- 2 tablespoons soy sauce or tamari
- 1 tablespoon jerk seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup cooked brown rice
- 1/2 cup black beans, rinsed and drained
- 1/4 cup corn kernels
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 2 tablespoons chipotle sauce (adjust to taste)
- 1 lime, cut into wedges
Instructions
- Shred the drained jackfruit using your fingers or two forks. Squeeze out any excess moisture.
- Heat the olive oil in a medium skillet over medium heat. Add the shredded jackfruit and cook for 5 minutes, stirring occasionally, until slightly dry.
- Stir in the BBQ sauce, soy sauce, jerk seasoning, smoked paprika, garlic powder, and cayenne pepper, if using. Cook for another 5-7 minutes until the jackfruit is well coated and heated through.
- Assemble the bowls: Place one cup of cooked brown rice in the bottom of each bowl.
- Top the rice with the BBQ jerk jackfruit mixture, black beans, corn, and red onion.
- Drizzle the chipotle sauce over the ingredients.
- Garnish with fresh cilantro and serve with a lime wedge.
Notes
- For a spicier flavor, increase the amount of jerk seasoning or cayenne pepper.
- You can prepare the jackfruit mixture ahead of time and store it in the refrigerator for up to 3 days.
- Use your favorite type of rice, such as white rice or quinoa.
