Ultimate Creamed Spinach Gratin

Description

A rich and comforting baked spinach gratin dish.


Ingredients

  • 2 lbs fresh spinach
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg
  • 1 cup shredded Gruyere cheese, divided
  • 1/2 cup panko breadcrumbs

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease an 8×8 inch baking dish.
  2. Wash the spinach thoroughly. Blanch the spinach in boiling water for 1 minute, then immediately transfer it to an ice bath. Squeeze all excess water from the spinach and chop it coarsely.
  3. In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute, stirring constantly.
  4. Gradually whisk in the milk until the mixture thickens into a smooth sauce. Stir in the heavy cream, salt, pepper, and nutmeg.
  5. Remove the sauce from the heat. Stir in 3/4 cup of the Gruyere cheese until melted and smooth.
  6. Fold the chopped spinach into the cheese sauce. Pour the mixture into the prepared baking dish.
  7. In a small bowl, mix the remaining 1/4 cup Gruyere cheese with the panko breadcrumbs. Sprinkle this mixture evenly over the top of the spinach.
  8. Bake for 20 to 25 minutes, or until the top is golden brown and the filling is bubbly.

Notes

  • You can substitute Parmesan cheese for Gruyere if desired.
  • For a richer flavor, use fresh grated nutmeg instead of ground.
