Ingredients

  • 1/4 cup dried shrimp (optional)
  • 1/4 cup roasted peanuts
  • 1 small shallot, thinly sliced
  • 1 red chili, thinly sliced

  • 1 teaspoon sugar
  • 1 clove garlic, minced

Instructions

  1. Peel the green mangoes and shred the flesh using a mandolin or coarse grater. Place the shredded mango in a large bowl.
  2. If using, soak the dried shrimp in warm water for 5 minutes, then drain well.
  3. In a small bowl, whisk together the fish sauce, lime juice, sugar, and minced garlic to create the dressing.
  4. Add the sliced shallot and chili to the shredded mango.
