Description

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup pineapple juice
  • 2 tablespoons adobo sauce from chipotle peppers in adobo
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 12 small corn tortillas
  • 1 cup diced fresh pineapple
  • 1/2 cup chopped cilantro
  • 1/4 cup diced white onion
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Add ground turkey to the skillet. Break it up with a spoon and cook until browned. Drain off any excess fat.
  4. In a small bowl, whisk together pineapple juice, adobo sauce, apple cider vinegar, chili powder, cumin, oregano, and cinnamon.
  5. Pour the sauce mixture over the cooked turkey. Stir well to coat.
  6. Simmer for 5 to 7 minutes, allowing the sauce to reduce slightly and the flavors to combine. Season with salt and pepper.
  7. Warm the corn tortillas according to package directions (usually briefly heated on a dry skillet or in the microwave).
  8. Fill each tortilla with the turkey mixture.
  9. Top with diced pineapple, cilantro, and diced white onion.
  10. Serve immediately with lime wedges.

Notes

  • You can substitute ground chicken for ground turkey if desired.
  • For extra heat, add a pinch of cayenne pepper to the sauce mixture.
  • If you do not have adobo sauce, use 1 tablespoon of tomato paste mixed with 1 teaspoon of smoked paprika and a dash of hot sauce.
