Description
A straightforward recipe for soft cookies featuring fresh strawberry flavor.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup finely pureed fresh strawberries, drained of excess liquid
- 1/2 cup powdered sugar for dusting
Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the pureed strawberries until the dough is uniform in color.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- Once cool, dust the cookies with powdered sugar.
Notes
- Ensure your strawberry puree is thick; drain excess water using a fine-mesh sieve or paper towels.
- Do not overmix the dough after adding the flour.
- You can use freeze-dried strawberry powder for a more intense flavor without adding extra moisture.
