Description

Ingredients

  • 1 pound pasta (penne or linguine)
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and black pepper to taste
  • 1/4 cup fresh basil, chopped
  • Grated Parmesan cheese, for serving

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Remove chicken and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes.
  4. Add garlic and red pepper flakes and cook for 1 minute until fragrant.
  5. Stir in crushed tomatoes, chicken broth, and oregano. Bring the sauce to a simmer.
  6. Return the cooked chicken to the sauce. Season with salt and pepper. Simmer for 10 minutes, allowing flavors to combine.
  7. Toss the cooked pasta with the sauce and chicken.
  8. Stir in fresh basil. Serve immediately topped with Parmesan cheese.

  • For a thicker sauce, simmer uncovered for a few extra minutes.
  • You can substitute shrimp or Italian sausage for the chicken.
