- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1/2 cup milk

- For the Streusel: 1/2 cup all-purpose flour, 1/4 cup packed brown sugar, 1/4 cup granulated sugar, 1/2 teaspoon ground cinnamon, 1/4 cup cold unsalted butter, cubed
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour an 8×8 inch baking pan.
- In a medium bowl, whisk together the 1 3/4 cups flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and 3/4 cup granulated sugar until light and fluffy.
- Beat in the egg until combined.
- Mix in the milk and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Prepare the streusel: In a small bowl, combine the 1/2 cup flour, brown sugar, 1/4 cup granulated sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Pour half of the batter into the prepared pan. Sprinkle half of the streusel mixture evenly over the batter. Top with the remaining batter, and then sprinkle the remaining streusel over the top.
- Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan before slicing and serving.
Notes
- You can add 1/2 cup chopped nuts to the streusel mixture if you prefer.
- For a richer flavor, substitute sour cream for the milk.
