Description
A quick recipe for making classic shrimp fried rice at home.
Ingredients

- 2 tablespoons vegetable oil
- 1 pound raw shrimp, peeled and deveined
- 2 cloves garlic, minced
- 1 cup chopped onion
- 1 cup frozen peas and carrots mix
- 3 cups cooked, cold white rice
- 2 large eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove the shrimp and set aside.
- Add the remaining 1 tablespoon of oil to the skillet. Add the garlic and onion and cook until softened, about 2 minutes.
- Add the frozen peas and carrots. Cook for 3 minutes until heated through.
- Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty space and scramble until just set. Break the eggs into small pieces.
- Add the cold rice to the skillet. Stir everything together well.
- Return the cooked shrimp to the skillet.
- Pour the soy sauce and sesame oil over the mixture. Stir constantly until heated through, about 3-4 minutes.
- Season with salt and pepper as needed. Serve immediately.
Notes
- Use day-old, cold rice for the best texture in fried rice.
- You can substitute chicken or tofu for the shrimp.
