- 3 medium zucchini, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup all-purpose flour
- 1/2 cup milk
- 2 large eggs, lightly beaten
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped onion
- 2 tablespoons butter, melted
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Grease an 8×8 inch baking dish.
- In a large bowl, combine the sliced zucchini and chopped onion.
- In a separate bowl, whisk together the eggs, milk, melted butter, salt, and pepper.
- In another bowl, mix the flour and Parmesan cheese. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Pour the batter over the zucchini and onion mixture. Stir gently to coat everything evenly.
- Transfer the mixture to the prepared baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top.
- Bake for 35 to 40 minutes, or until the top is golden brown and the casserole is set.
- Let the casserole cool for 5 minutes before serving.
Notes
- You can substitute yellow squash for some of the zucchini if you have extra from your garden.
- For a richer flavor, use whole milk instead of lower-fat milk.
