Description

A quick and simple saute of fresh asparagus and spinach with garlic and lemon.


Ingredients

  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 5 ounces fresh spinach
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 teaspoon fresh lemon juice

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and cook for 30 seconds until fragrant. Do not brown the garlic.
  3. Add the asparagus pieces to the skillet. Saute for 4 to 5 minutes until tender-crisp.
  4. Add the spinach to the skillet. Cook, stirring constantly, until the spinach wilts, about 1 to 2 minutes.
  5. Remove the skillet from the heat. Stir in salt, pepper, and lemon juice.
  6. Serve immediately.

Notes

  • You can add a pinch of red pepper flakes for a little heat.
  • For extra flavor, grate a small amount of Parmesan cheese over the vegetables before serving.
