A fresh salad featuring corn, black beans, avocado, and a lime vinaigrette.


Ingredients

  • 1 head romaine lettuce, chopped
  • 1 cup cooked corn kernels
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 large avocado, diced
  • 1/2 cup chopped red onion
  • 1/2 cup chopped cilantro
  • 1/4 cup olive oil
  • 3 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the chopped romaine lettuce in a large bowl.
  2. Add the corn, black beans, diced avocado, red onion, and cilantro to the bowl.
  3. In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad ingredients.
  5. Toss gently until everything is lightly coated.
  6. Serve immediately.

  • You can add grilled chicken or shrimp for extra protein.
  • For a spicier flavor, add diced jalapeño to the salad.
