Ingredients

- 1 head romaine lettuce, chopped
- 1 cup cooked corn kernels
- 1 (15 ounce) can black beans, rinsed and drained
- 1 large avocado, diced
- 1/2 cup chopped red onion
- 1/2 cup chopped cilantro
- 1/4 cup olive oil
- 3 tablespoons fresh lime juice
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place the chopped romaine lettuce in a large bowl.
- Add the corn, black beans, diced avocado, red onion, and cilantro to the bowl.
- In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper to make the dressing.
- Pour the dressing over the salad ingredients.
- Toss gently until everything is lightly coated.
- Serve immediately.
Notes
- You can add grilled chicken or shrimp for extra protein.
- For a spicier flavor, add diced jalapeño to the salad.
