Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/4 cup water

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  3. In a separate bowl, mix the granulated sugar, brown sugar, vegetable oil, eggs, and pumpkin puree until combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Stir in the water until the batter is smooth.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before removing it to a wire rack to cool completely.

Notes

  • For a stronger spice flavor, increase cinnamon to 1 1/2 teaspoons.
  • You can substitute applesauce for the vegetable oil for a lower fat option.
