  • 1 cup powdered sugar (for filling)
  • 1/2 cup unsalted butter, softened (for filling)
  • 2 tablespoons milk (for filling)
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Beat the softened butter and brown sugar together until light and fluffy.
  2. Add the egg and molasses; mix well.
  3. In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half, flatten into disks, wrap in plastic, and chill for at least 2 hours.
  6. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Roll out one dough disk to 1/4-inch thickness. Cut out shapes using cookie cutters. Repeat with the second disk.
  8. Bake for 8 to 10 minutes, or until edges are set. Let cool completely on the baking sheet for 5 minutes before moving to a wire rack to cool fully.
  9. To make the filling, beat the powdered sugar and softened butter until smooth.
  10. Add the milk and vanilla extract; beat until light and creamy.
  11. Once cookies are cool, spread filling on the flat side of one cookie and top with another cookie to form a sandwich.
