A rich chocolate cake made with paleo-friendly ingredients and topped with a light, whipped chocolate frosting.


Ingredients

  • 1 3/4 cups almond flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup maple syrup
  • 1/2 cup melted coconut oil
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • For Frosting: 1/2 cup coconut cream, chilled overnight
  • For Frosting: 1/4 cup unsweetened cocoa powder
  • For Frosting: 1/4 cup maple syrup
  • For Frosting: 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a large bowl, whisk together the almond flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, whisk the eggs, maple syrup, melted coconut oil, almond milk, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared cake pan.
  6. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  8. To make the frosting, scoop the thick cream from the top of the chilled coconut cream can (discard the liquid).
  9. Beat the coconut cream with an electric mixer until fluffy.
  10. Add the cocoa powder, maple syrup, and vanilla extract to the whipped cream. Beat until smooth and well combined.
  11. Once the cake is completely cool, spread the whipped chocolate frosting evenly over the top.

Notes

  • Ensure your coconut cream is very cold for the best frosting results.
  • You can use two 6-inch pans for a taller layer cake.
