Make chewy chocolate chip cookies that follow the Paleo diet using almond flour.
Ingredients

- 1 3/4 cups almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup coconut oil, softened
- 1/2 cup maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup dark chocolate chips (Paleo compliant)
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
- In a medium bowl, whisk together the almond flour, baking soda, and salt.
- In a separate large bowl, cream together the softened coconut oil and maple syrup until smooth.
- Beat in the egg and vanilla extract until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For chewier cookies, slightly underbake them.
- Store cooled cookies in an airtight container at room temperature for up to 5 days.
