Ingredients

Scale
  • 1 cup oat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 3/4 cup milk
  • 1 tablespoon melted butter or oil

Instructions

  1. Mix oat flour, baking powder, and salt in a bowl.
  2. In a separate bowl, whisk the egg, milk, and melted butter or oil.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Heat a lightly oiled griddle or pan over medium heat.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, until bubbles appear on the surface and the edges look set.
  7. Flip and cook the other side until golden brown.
  8. Serve immediately.

Notes

  • You can make your own oat flour by blending rolled oats in a food processor until fine.
  • Adjust milk amount slightly if the batter seems too thick.
