Description

Simple recipe for chocolate cupcakes topped with a rich Nutella frosting.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup hot water
  • 1 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1/2 cup Nutella (for frosting)
  • 1/4 cup milk (for frosting)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line a standard 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. Add the granulated sugar and brown sugar to the dry ingredients and mix well.
  4. Pour in the vegetable oil, eggs, buttermilk, and vanilla extract. Mix on medium speed until just combined.
  5. Carefully mix in the hot water until the batter is smooth. The batter will be thin.
  6. Fill each cupcake liner about two-thirds full.
  7. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely on a wire rack.
  8. To make the frosting, beat the softened butter in a large bowl until creamy.
  9. Gradually add the powdered sugar, alternating with the milk, beating until smooth.
  10. Beat in the Nutella until the frosting is light and fluffy.
  11. Pipe or spread the frosting onto the cooled cupcakes.

Notes

  • You can substitute the buttermilk with 1 cup of regular milk mixed with 1 tablespoon of white vinegar or lemon juice; let it sit for 5 minutes before using.
  • For extra flavor, sprinkle chopped hazelnuts on top of the frosting.
