  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Prepare the crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Divide the dough in half, form into two discs, wrap in plastic, and chill for at least 1 hour.
  2. Prepare the filling: In a separate bowl, gently combine the mixed berries, granulated sugar, cornstarch, and lemon juice.
  3. Assemble the pie: On a lightly floured surface, roll out one dough disc to fit a 9-inch pie plate. Place the bottom crust in the plate. Pour the berry filling into the crust.
  4. Roll out the second dough disc for the top crust. Place it over the filling. Trim and crimp the edges to seal. Cut several slits in the top crust to allow steam to escape.
  5. Brush the top crust with the beaten egg and sprinkle with coarse sugar.
  6. Bake: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Place the pie on a baking sheet to catch drips. Bake for 20 minutes at 400°F. Reduce the oven temperature to 375 degrees Fahrenheit (190 degrees Celsius) and continue baking for another 35 to 45 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Cool: Let the pie cool on a wire rack for at least 3 hours before slicing and serving. This allows the filling to set.

Notes

  • If the crust edges begin to brown too quickly during baking, cover them loosely with aluminum foil strips.
