A straightforward recipe for flavorful lemon rice.
Ingredients

- 1 cup white rice
- 2 cups water
- 1 tablespoon butter or oil
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Rinse the rice under cold water until the water runs clear.
- Combine the rinsed rice and water in a saucepan. Bring to a boil.
- Reduce heat to low, cover the saucepan, and simmer for 15 minutes, or until all water is absorbed.
- Remove the saucepan from the heat and let it stand, covered, for 5 minutes.
- Fluff the rice with a fork.
- Stir in the butter or oil, lemon juice, lemon zest, salt, and pepper.
- Serve immediately.
Notes
- For added flavor, you can add 1/4 cup of toasted slivered almonds after fluffing the rice.
- Use long-grain white rice for the best texture.
