Description
A light and refreshing soup featuring cabbage, lemon, and dill.
Ingredients

- 6 cups vegetable broth
- 1 medium head green cabbage, shredded
- 1 large carrot, diced
- 1 celery stalk, diced
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 2 tablespoons fresh dill, chopped
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrot, and celery. Cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Add shredded cabbage and vegetable broth to the pot.
- Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, or until the cabbage is tender.
- Stir in the fresh lemon juice and chopped dill.
- Season with salt and pepper to your taste.
- Serve hot.
Notes
- For a thicker soup, mash a small portion of the cooked cabbage against the side of the pot before serving.
- You can add 1/2 cup of cooked white rice or small pasta during the last 10 minutes of simmering for more substance.
