A straightforward recipe for tart and sweet lemon bars with a shortbread crust.

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar (for crust)
  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon all-purpose flour (for filling)
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
  2. Prepare the crust: In a medium bowl, mix 1 cup flour, 1/2 cup softened butter, and 1/4 cup sugar until crumbly. Press this mixture evenly into the bottom of the prepared pan.
  3. Bake the crust for 15 minutes, or until lightly golden.
  4. Prepare the filling: While the crust bakes, whisk together the 2 eggs, 1 cup sugar, 1/4 cup lemon juice, lemon zest, and 1 tablespoon flour in a separate bowl until smooth.
  5. Pour the filling mixture over the hot, baked crust.
  6. Return the pan to the oven and bake for an additional 20 to 25 minutes, or until the filling is set and no longer liquid in the center.
  7. Let the bars cool completely in the pan on a wire rack.
  8. Once cool, lift the bars out using the parchment overhang. Cut into squares.
  9. Dust generously with powdered sugar before serving.
