- 1 head romaine lettuce, chopped
- 1/2 cup cooked chicken breast, chopped (optional)
- 1/2 cup mozzarella cheese, cubed
- 1/4 cup Parmesan cheese, grated
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Combine the chopped romaine lettuce, chicken (if using), mozzarella, and Parmesan cheese in a large bowl.
- In a small bowl, whisk together the red wine vinegar, olive oil, oregano, salt, and pepper to make the dressing.
- Pour the dressing over the salad ingredients.
- Toss everything together until the salad is evenly coated.
- Serve immediately.
Notes
- For a vegetarian version, omit the chicken.
- You can prepare the dressing up to one day ahead and store it in the refrigerator.
