This recipe combines the flavors of tacos with the comfort of pasta for a fast and satisfying meal.
Ingredients

- 1 pound ground beef or turkey
- 1 medium onion, chopped
- 1 packet (1 ounce) taco seasoning mix
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 (15 ounce) can tomato sauce
- 4 cups water
- 8 ounces elbow macaroni
- 1 cup shredded cheddar or Mexican blend cheese
Instructions
- Brown the ground meat and onion in a large pot or Dutch oven over medium heat. Drain off any excess fat.
- Stir in the taco seasoning, diced tomatoes and green chilies, and tomato sauce.
- Add the water and bring the mixture to a boil.
- Add the macaroni and return to a boil. Reduce heat to medium-low, cover, and simmer for 12 to 15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
- Remove from heat. Stir in the shredded cheese until melted and creamy.
- Serve immediately.
Notes
- You can substitute ground chicken or plant-based crumbles for the beef.
- Add a splash of milk or cream at the end for a creamier texture if desired.
