- 4 boneless, skinless chicken thighs
- 4 oz cream cheese, softened
- 1/4 cup chopped spinach
- 2 cloves garlic, minced
- 1/4 cup shredded mozzarella cheese
- 1 teaspoon dried Italian herbs
- Salt and black pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400 degrees F (200 degrees C).
- In a small bowl, mix the softened cream cheese, spinach, minced garlic, mozzarella cheese, and Italian herbs. Season with salt and pepper.
- Carefully cut a deep pocket into the side of each chicken thigh, being careful not to cut all the way through.
- Spoon the cheese mixture evenly into the pockets of the chicken thighs. Secure the opening with toothpicks if necessary.
- Rub the outside of the stuffed chicken thighs with olive oil and season with salt and pepper.
- Place the chicken thighs in a baking dish.
- Bake for 25 to 30 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C) and the juices run clear.
- Remove toothpicks before serving.
Notes
- You can substitute the spinach with sun-dried tomatoes or chopped mushrooms for a different flavor.
- Browning the chicken in a skillet before baking will give the skin a crispier texture.
