Ingredients

  • 4 boneless, skinless chicken thighs
  • 4 oz cream cheese, softened
  • 1/4 cup chopped spinach
  • 2 cloves garlic, minced
  • 1/4 cup shredded mozzarella cheese
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. In a small bowl, mix the softened cream cheese, spinach, minced garlic, mozzarella cheese, and Italian herbs. Season with salt and pepper.
  3. Carefully cut a deep pocket into the side of each chicken thigh, being careful not to cut all the way through.
  4. Spoon the cheese mixture evenly into the pockets of the chicken thighs. Secure the opening with toothpicks if necessary.
  5. Rub the outside of the stuffed chicken thighs with olive oil and season with salt and pepper.
  6. Place the chicken thighs in a baking dish.
  7. Bake for 25 to 30 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C) and the juices run clear.
  8. Remove toothpicks before serving.

Notes

  • You can substitute the spinach with sun-dried tomatoes or chopped mushrooms for a different flavor.
  • Browning the chicken in a skillet before baking will give the skin a crispier texture.
