Description

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 2 cups peeled, cored, and chopped apples (about 3 medium)
  • 1/2 cup packed brown sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, mixing just until combined. Do not overmix.
  5. In a separate bowl, toss the chopped apples with the brown sugar and lemon juice.
  6. Divide the batter evenly between the prepared cake pans. Sprinkle half of the spiced apple mixture over the top of each batter layer.
  7. Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  9. Once cool, stack the layers. You can dust the top with powdered sugar if desired.

Notes

  • For a richer flavor, use a mix of sweet and tart apples.
  • You can substitute yogurt for buttermilk if needed.
