Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup buttermilk
- 2 cups peeled, cored, and chopped apples (about 3 medium)
- 1/2 cup packed brown sugar
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch round cake pans.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, mixing just until combined. Do not overmix.
- In a separate bowl, toss the chopped apples with the brown sugar and lemon juice.
- Divide the batter evenly between the prepared cake pans. Sprinkle half of the spiced apple mixture over the top of each batter layer.
- Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- Once cool, stack the layers. You can dust the top with powdered sugar if desired.
Notes
- For a richer flavor, use a mix of sweet and tart apples.
- You can substitute yogurt for buttermilk if needed.
