Description

A simple recipe for making soft, chewy pretzel bites at home.

Ingredients

Scale
  • 1 1/2 cups warm water (about 110°F)
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1 teaspoon granulated sugar
  • 3 3/4 cups all-purpose flour, plus more for dusting
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • 1/2 cup baking soda
  • 8 cups water (for boiling)
  • 2 tablespoons unsalted butter, melted (for topping)
  • Coarse salt (for topping)

Instructions

  1. In a large bowl, combine the warm water, yeast, and sugar. Let stand for 5 minutes until foamy.
  2. Stir in 2 cups of the flour, the 2 tablespoons of melted butter, and the salt. Mix until just combined.
  3. Gradually add the remaining 1 3/4 cups of flour until a soft dough forms. Knead on a lightly floured surface for 5-7 minutes until smooth.
  4. Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat your oven to 450°F (230°C). Line two baking sheets with parchment paper.
  6. In a large pot, bring 8 cups of water and the baking soda to a boil.
  7. Punch down the risen dough. Roll small pieces of dough into ropes about 1/2 inch thick and cut into 1-inch pieces.
  8. Working in batches, carefully drop the dough pieces into the boiling water for 30 seconds, turning once.
  9. Remove the pieces with a slotted spoon and place them on the prepared baking sheets.
  10. Bake for 10-12 minutes, or until golden brown.
  11. Brush the hot pretzel bites immediately with the remaining 2 tablespoons of melted butter and sprinkle with coarse salt.

Notes

  • Serve warm with your favorite dipping sauce, like cheese sauce or mustard.
  • For a richer flavor, you can use bread flour instead of all-purpose flour.
