Simple grilled chicken kabobs with a savory peanut sauce.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1/4 cup water
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 medium red onion, cut into 1-inch pieces
- Wooden or metal skewers
Instructions
- Soak wooden skewers in water for 30 minutes if using.
- In a small bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, ginger, garlic, and water until smooth to make the marinade/sauce.
- Place chicken cubes in a bowl and pour half of the peanut mixture over the chicken. Toss to coat. Reserve the remaining half for basting and serving.
- Marinate the chicken for at least 30 minutes, or up to 4 hours in the refrigerator.
- Thread the marinated chicken, red pepper, green pepper, and red onion pieces onto the skewers, alternating ingredients.
- Preheat your grill to medium-high heat. Lightly oil the grates.
- Grill the kabobs for 10 to 12 minutes, turning occasionally, until the chicken is cooked through (internal temperature reaches 165°F or 74°C).
- During the last few minutes of cooking, brush the kabobs with some of the reserved peanut sauce.
- Remove from the grill and serve immediately with the remaining reserved peanut sauce for dipping.
Notes
- You can substitute chicken thighs for breasts if you prefer a moister texture.
- If you do not have a grill, you can bake these at 400°F (200°C) for 15-20 minutes, turning halfway.
