Description

A simple, no-bake dessert combining pumpkin spice flavors with classic tiramisu layers.


Ingredients

  • 1 (15 ounce) can pure pumpkin puree
  • 1 cup heavy whipping cream
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup strong brewed coffee, cooled
  • 1 tablespoon dark rum or bourbon (optional)
  • 2 (7 ounce) packages ladyfingers
  • Cocoa powder, for dusting

Instructions

  1. In a medium bowl, beat the heavy whipping cream until stiff peaks form. Set aside.
  2. In a large bowl, beat the softened cream cheese until smooth. Add the powdered sugar, vanilla extract, pumpkin pie spice, cinnamon, and nutmeg. Beat until well combined.
  3. Gently fold the pumpkin puree into the cream cheese mixture.
  4. Fold the whipped cream into the pumpkin mixture until just combined. Do not overmix.
  5. In a shallow dish, mix the cooled coffee and rum or bourbon, if using.
  6. Quickly dip each ladyfinger into the coffee mixture, coating both sides briefly. Do not soak them.
  7. Arrange a single layer of dipped ladyfingers in the bottom of an 8×8 inch baking dish.
  8. Spread half of the pumpkin cream mixture evenly over the ladyfingers.
  9. Repeat with a second layer of dipped ladyfingers.
  10. Top with the remaining pumpkin cream mixture, spreading it evenly.
  11. Cover the dish and refrigerate for at least 6 hours, or preferably overnight, to allow it to set.
  12. Before serving, dust the top generously with cocoa powder.

Notes

  • For a non-alcoholic version, omit the rum or bourbon from the coffee mixture.
  • You can use espresso instead of strong brewed coffee for a more intense flavor.
  • If you do not have an 8×8 dish, a 9×9 dish works, but the layers will be slightly thinner.
