  • Black pepper to taste

Instructions

  1. Melt butter in a saucepan over medium heat.
  2. Add minced shallot and cook until softened, about 3 minutes.
  3. Add sliced mushrooms and leeks. Cook until vegetables are tender and moisture has evaporated, about 8 to 10 minutes.
  4. Sprinkle flour over the vegetables and stir constantly for 1 minute.
  5. Gradually whisk in vegetable broth until smooth.
  6. Stir in dried thyme. Bring the mixture to a simmer.
  7. Cook, stirring occasionally, until the gravy thickens, about 5 to 7 minutes.
