Description

A large, flavorful grilled cheese sandwich featuring cooked chicken and pesto.


Ingredients

  • 4 slices sourdough bread
  • 4 tablespoons butter, softened
  • 4 tablespoons basil pesto
  • 8 ounces mozzarella cheese, sliced
  • 1 cup cooked chicken breast, shredded or diced
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Spread butter evenly on one side of each slice of bread.
  2. Flip two slices of bread butter-side down.
  3. Spread pesto on the unbuttered side of the two bread slices.
  4. Layer half of the mozzarella cheese over the pesto on each slice.
  5. Distribute the cooked chicken evenly over the cheese layers.
  6. Top the chicken with the remaining mozzarella cheese.
  7. Sprinkle Parmesan cheese over the top layer of cheese.
  8. Place the remaining two slices of bread on top, butter-side up.
  9. Heat a large skillet or griddle over medium heat.
  10. Place the sandwiches in the hot skillet.
  11. Grill for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
  12. Remove from the skillet and slice in half.

Notes

  • Use rotisserie chicken for quick preparation.
  • For extra flavor, lightly toast the chicken with a small amount of pesto before assembling.
