A large, flavorful grilled cheese sandwich featuring cooked chicken and pesto.
Ingredients

- 4 slices sourdough bread
- 4 tablespoons butter, softened
- 4 tablespoons basil pesto
- 8 ounces mozzarella cheese, sliced
- 1 cup cooked chicken breast, shredded or diced
- 2 tablespoons grated Parmesan cheese
Instructions
- Spread butter evenly on one side of each slice of bread.
- Flip two slices of bread butter-side down.
- Spread pesto on the unbuttered side of the two bread slices.
- Layer half of the mozzarella cheese over the pesto on each slice.
- Distribute the cooked chicken evenly over the cheese layers.
- Top the chicken with the remaining mozzarella cheese.
- Sprinkle Parmesan cheese over the top layer of cheese.
- Place the remaining two slices of bread on top, butter-side up.
- Heat a large skillet or griddle over medium heat.
- Place the sandwiches in the hot skillet.
- Grill for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
- Remove from the skillet and slice in half.
Notes
- Use rotisserie chicken for quick preparation.
- For extra flavor, lightly toast the chicken with a small amount of pesto before assembling.
