Description
A recipe for making a layered cake using thin crepes flavored with matcha green tea.
Ingredients

- 1 cup all-purpose flour
- 3 large eggs
- 1/2 cup milk
- 1/2 cup water
- 2 tablespoons melted unsalted butter
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- 2 teaspoons matcha powder
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Whisk flour, eggs, milk, water, melted butter, sugar, salt, and matcha powder together until smooth.
- Heat a non-stick pan over medium heat. Lightly grease the pan.
- Pour about 2 tablespoons of batter into the pan, tilting to coat the bottom thinly. Cook for 1-2 minutes until the edges brown slightly.
- Flip and cook the other side for about 30 seconds. Slide the crepe onto a plate.
- Repeat with the remaining batter, stacking crepes as you go. You should have about 15-20 crepes.
- In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Place one crepe on a serving plate. Spread a thin, even layer of whipped cream over the top.
- Repeat layering crepes and cream until all crepes are used, finishing with a layer of cream on top.
- Refrigerate the cake for at least 4 hours before serving.
Notes
- Sift the matcha powder before adding it to the batter to prevent lumps.
- Use a 6-inch or 8-inch non-stick pan for uniform crepe size.
- Dust the top with extra matcha powder before serving, if desired.
