Ingredients

  • 1 lb breakfast sausage
  • 1.5 lbs potatoes, cubed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons maple syrup
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sausage and cook, breaking it up, until browned. Remove sausage and set aside, leaving about 1 tablespoon of drippings in the skillet.
  3. Add potatoes and onion to the skillet. Cook for 10-12 minutes, stirring occasionally, until potatoes are tender and lightly browned.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Return the cooked sausage to the skillet.
  6. Stir in maple syrup, sage, salt, and pepper. Cook for 2-3 minutes, stirring to coat everything evenly.
  7. Serve immediately.

Notes

  • For crispier potatoes, parboil the cubes for 5 minutes before adding them to the skillet.
  • You can substitute turkey sausage for pork sausage.
