Description

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Season the shrimp lightly with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and cook for 1 minute until fragrant. Do not brown the garlic.
  4. Add sun-dried tomatoes and Italian seasoning; cook for 2 minutes.
  5. Pour in heavy cream and chicken broth. Bring the mixture to a simmer.
  6. Stir in Parmesan cheese until the sauce thickens slightly.
  7. Add the shrimp to the skillet and cook for 3-4 minutes, turning once, until pink and cooked through.
  8. Stir in fresh spinach until it wilts, about 1-2 minutes.
  9. Taste and adjust salt and pepper as needed before serving.

Notes

  • Serve this dish over pasta, rice, or with crusty bread for dipping in the sauce.
  • You can substitute half-and-half for heavy cream for a slightly lighter sauce, but the texture will be thinner.
