A simple recipe for shrimp cooked in a rich, creamy garlic sauce with spinach and sun-dried tomatoes.

- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 teaspoon dried Italian seasoning
- Salt and black pepper to taste
Instructions
- Season the shrimp lightly with salt and pepper.
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook for 1 minute until fragrant. Do not brown the garlic.
- Add sun-dried tomatoes and Italian seasoning; cook for 2 minutes.
- Pour in heavy cream and chicken broth. Bring the mixture to a simmer.
- Stir in Parmesan cheese until the sauce thickens slightly.
- Add the shrimp to the skillet and cook for 3-4 minutes, turning once, until pink and cooked through.
- Stir in fresh spinach until it wilts, about 1-2 minutes.
- Taste and adjust salt and pepper as needed before serving.
Notes
- Serve this dish over pasta, rice, or with crusty bread for dipping in the sauce.
- You can substitute half-and-half for heavy cream for a slightly lighter sauce, but the texture will be thinner.
