Cranberry Orange Cheesecake

Description

A rich cheesecake flavored with cranberry and orange zest.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 3 large eggs
  • Zest of 1 orange
  • 1/2 cup fresh or frozen cranberries
  • 2 tablespoons orange juice

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Wrap the outside of a 9-inch springform pan with heavy-duty aluminum foil.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared springform pan.
  3. Bake the crust for 10 minutes. Remove from the oven and let it cool slightly.
  4. In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the 1 1/2 cups sugar until combined.
  5. Mix in the vanilla extract and sour cream. Beat in the eggs one at a time, mixing just until incorporated after each addition.
  6. Stir in the orange zest. Pour half of the cream cheese mixture over the crust.
  7. In a small bowl, mix the cranberries and orange juice. Drop spoonfuls of the cranberry mixture over the batter. Pour the remaining cream cheese mixture over the top. Swirl gently with a knife if desired.
  8. Place the springform pan inside a larger roasting pan. Carefully pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan (this creates a water bath).
  9. Bake for 50 to 60 minutes, or until the edges are set but the center still jiggles slightly.
  10. Turn off the oven, crack the oven door open, and let the cheesecake cool in the oven for 1 hour.
  11. Remove the cheesecake from the water bath and let it cool completely on a wire rack.
  12. Refrigerate for at least 6 hours, or preferably overnight, before serving.

Notes

  • Use room temperature cream cheese for a smoother batter.
  • Do not overmix the batter once the eggs are added.
  • The water bath helps prevent cracking.
