Description

A quick skillet meal combining ground beef, pasta, and cheese flavors reminiscent of a cheeseburger.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups beef broth
  • 8 ounces elbow macaroni
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Brown the ground beef in a large skillet over medium heat. Drain excess fat.
  2. Add the chopped onion to the skillet and cook until soft, about 5 minutes.
  3. Stir in the minced garlic, salt, pepper, oregano, and basil. Cook for 1 minute until fragrant.
  4. Pour in the diced tomatoes (with juice) and beef broth. Bring the mixture to a boil.
  5. Add the elbow macaroni. Reduce heat to medium-low, cover, and simmer for 10 to 12 minutes, stirring occasionally to prevent sticking, until the pasta is tender.
  6. Stir in the milk. Continue to cook, uncovered, until the sauce thickens slightly, about 3 minutes.
  7. Remove the skillet from the heat. Stir in the cheddar cheese and Monterey Jack cheese until melted and smooth.
  8. Serve immediately.

Notes

  • For a tangier flavor, add 2 tablespoons of ketchup or mustard along with the milk.
  • Use your favorite cheese blend for substitution.
