A simple recipe for sweet potato mash flavored with brown butter and maple syrup.

- 2 lbs sweet potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- 2 tablespoons pure maple syrup
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup milk or cream (optional)
Instructions
- Place the cubed sweet potatoes in a large pot and cover with water.
- Bring the water to a boil and cook until the potatoes are tender, about 15 to 20 minutes.
- While the potatoes cook, melt the butter in a small skillet over medium heat. Continue cooking, stirring occasionally, until the butter foams, then develops brown bits at the bottom and smells nutty. This is brown butter. Remove from heat immediately.
- Drain the cooked sweet potatoes well.
- Return the potatoes to the pot. Add the brown butter, maple syrup, salt, and pepper.
- Mash the potatoes until smooth. Add milk or cream if a thinner consistency is desired.
- Taste and adjust seasoning if needed before serving.
Notes
- For richer flavor, use heavy cream instead of milk.
- You can brown the butter ahead of time and store it in the refrigerator. Reheat gently before using.
