- 1/2 cup unsalted butter
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 3 large ripe bananas, mashed
- 3/4 cup granulated sugar
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a standard loaf pan.
- Melt the butter in a small saucepan over medium heat. Continue cooking, stirring occasionally, until the butter foams, then brown bits form at the bottom and it smells nutty. Remove from heat immediately and let cool slightly.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, combine the mashed bananas, sugar, beaten egg, vanilla extract, and the cooled brown butter. Mix until just combined.
- Add the dry ingredients to the wet ingredients. Mix gently until no streaks of flour remain. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
- Browning the butter adds a deeper flavor to the bread. Watch it closely to prevent burning.
- Use very ripe, spotty bananas for the best sweetness and moisture.
