Description

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/2 cup bourbon
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar, packed
  • 1/4 cup apple cider vinegar
  • 2 tablespoons ketchup
  • 1 tablespoon minced fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1 tablespoon vegetable oil
  • Cooked rice, for serving
  • Green onions, sliced, for garnish

Instructions

  1. In a medium bowl, whisk together the bourbon, soy sauce, brown sugar, apple cider vinegar, ketchup, ginger, garlic, and sesame oil. This is your sauce.
  2. Place the chicken pieces in a large skillet over medium-high heat. Add the vegetable oil. Cook the chicken until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. Pour the prepared sauce into the same skillet. Bring the sauce to a simmer.
  4. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
  5. Whisk the slurry into the simmering sauce. Continue to cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
  6. Return the cooked chicken to the skillet. Toss to coat the chicken evenly with the thickened sauce.
  7. Cook for 1 minute more until the chicken is fully coated and heated through.
  8. Serve the bourbon chicken over cooked rice. Garnish with sliced green onions.

Notes

  • If you prefer not to use bourbon, substitute it with chicken broth and add 1 teaspoon of vanilla extract for depth of flavor.
  • For a thicker sauce, increase the cornstarch slurry amount slightly.
