Description

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon vegetable oil
  • 1 package spring roll wrappers or samosa pastry sheets
  • Water (for sealing)
  • Vegetable oil for deep frying

Instructions

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Add the ground beef to the skillet. Break it up with a spoon and cook until browned. Drain off any excess fat.
  5. Stir in the ginger, cumin, coriander, turmeric, cayenne pepper, salt, and pepper. Cook for 2 minutes, stirring constantly.
  6. Remove the skillet from the heat and stir in the fresh cilantro. Let the filling cool completely.
  7. Take one pastry sheet and cut it into strips, usually 3-4 inches wide, depending on the size of your wrapper.
  8. Moisten the edge of one strip with water. Overlap a second strip onto the first, forming a cone shape, sealing the edges with water.
  9. Place about 1 to 2 tablespoons of the cooled beef filling into the cone.
  10. Fold the pastry over the filling, creating a triangular shape, sealing the edges firmly with water as you go.
  11. Repeat until all the filling is used.
  12. Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
  13. Carefully place the sambusas into the hot oil, working in batches to avoid overcrowding.
  14. Fry for 3 to 5 minutes, turning occasionally, until they are golden brown and crisp.
  15. Remove the sambusas with a slotted spoon and drain them on paper towels.

Notes

  • Ensure the filling is completely cool before assembling the sambusas to prevent the pastry from tearing.
  • Use a small bowl of water near your workstation for sealing the pastry edges.
  • Do not overcrowd the oil when frying; this lowers the oil temperature and results in greasy sambusas.
