Description
A simple recipe for a rich and spicy Cajun pasta made in a single pot.
Ingredients
Scale
- 1 pound linguine or fettuccine pasta
- 1 pound smoked sausage, sliced
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 3 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add sausage, onion, and bell pepper. Cook until sausage is browned and vegetables are soft, about 5 to 7 minutes.
- Stir in garlic and cook for 1 minute until fragrant.
- Add diced tomatoes, chicken broth, and Cajun seasoning to the pot. Bring the mixture to a boil.
- Add the pasta to the boiling liquid. Reduce heat to medium-low, cover, and simmer for 10 to 12 minutes, stirring occasionally to prevent sticking, until the pasta is cooked through and most of the liquid is absorbed.
- Stir in heavy cream and Parmesan cheese. Cook for 2 to 3 minutes until the sauce thickens slightly.
- Season with salt and pepper as needed. Serve immediately.
Notes
- Adjust the amount of Cajun seasoning for your preferred spice level.
- You can substitute chicken broth with vegetable broth for a different flavor base.
