A simple recipe for creamy gnocchi featuring melted brie cheese and crispy bacon.

- 1 pound potato gnocchi
- 4 slices bacon, chopped
- 1 shallot, minced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 4 ounces brie cheese, rind removed and cubed
- 1/4 cup grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Cook the gnocchi according to package directions. Drain and set aside.
- In a large skillet over medium heat, cook the chopped bacon until crisp. Remove the bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon fat in the skillet.
- Add the minced shallot to the skillet and cook until softened, about 2 minutes.
- Add the minced garlic and cook for 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Reduce heat to low.
- Stir in the cubed brie cheese until it melts completely into a smooth sauce.
- Stir in the Parmesan cheese. Season with salt and pepper.
- Add the cooked gnocchi to the skillet and toss gently to coat with the sauce.
- Stir in most of the crispy bacon.
- Serve immediately, garnished with the remaining bacon and fresh parsley.
Notes
- If the sauce becomes too thick, add a splash of the reserved gnocchi cooking water to thin it slightly.
- Use a good quality brie for the best flavor.
