Ingredients

  • 4 large whole wheat tortillas
  • 6 large eggs
  • 1/2 cup liquid egg whites
  • 1/2 cup shredded low-fat cheddar cheese
  • 1/2 cup cooked, crumbled turkey sausage or lean ground turkey
  • 1/4 cup black beans, rinsed and drained
  • 2 tablespoons chopped green onion
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add crumbled turkey sausage and cook until browned. Remove from skillet and set aside.
  3. In a bowl, whisk together eggs, egg whites, salt, and pepper.
  4. Pour egg mixture into the same skillet. Cook, stirring gently, until eggs are set but still slightly moist.
  5. Stir in the cooked sausage, black beans, and green onion into the eggs.
  6. Sprinkle cheese over the eggs and cook until melted.
  7. Warm the tortillas according to package directions.
  8. Divide the egg mixture evenly among the four tortillas.
  9. Fold in the sides of the tortilla, then roll up tightly from the bottom to form a burrito.
  10. Serve immediately or wrap individually for later.
