Description

Simple recipe for moist pumpkin bars with a light spice flavor.

Ingredients

Scale
  • 1 15 oz can pumpkin puree
  • 1/2 cup brown sugar, packed
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350 degrees F. Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, whisk together the pumpkin puree, brown sugar, maple syrup, eggs, vegetable oil, and vanilla extract until smooth.
  3. In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Fold in the chopped pecans, if using.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bars cool completely in the pan before cutting into squares.
