- 1 Tablespoon oil (e.g., coconut or vegetable)
- 1/4 teaspoon vanilla extract
Instructions
- In a microwave-safe mug, whisk together the flour, cocoa powder, sweetener, baking powder, and salt until combined.
- Add the milk, oil, and vanilla extract to the dry ingredients.
- Mix well with a fork until the batter is smooth and no dry pockets remain. Do not overmix.
- Microwave on high for 60 to 90 seconds. Cooking time varies by microwave power. Check at 60 seconds.
- The cake is done when the top looks set but is still slightly soft.
- Let cool in the mug for one minute before eating.
Notes
- For a richer flavor, add 1 teaspoon of instant coffee powder to the dry ingredients.
- If you prefer a fudgier texture, reduce the cooking time by 10 seconds.
- You can substitute applesauce for the oil for a lower-fat version.
